Recipe: Onion, Spinach, & Mushroom Frittata

Onion, Spinach, & Mushroom Frittata


1/2 jar of whole sweet onions, drained or 1/2 cup fresh sweet onions chopped

8 eggs

3 Tablespoons milk

1 Tablespoon oil (I used Grapeseed oil)

1 cup sliced mushrooms

1/2 cup chopped bell pepper (red or yellow are sweeter)

1 cup fresh spinach

3 slices of bacon, or 1/2 cup sausage or ham...(optional)

1/2 cup crumbled Feta cheese

2 Tablespoons Sweet Dandelion Greek Seasoning


In medium bowl, beat eggs and milk together, set to the side

Heat oil in an oven-proof nonstick or cast iron skillet over medium heat. Add onion, mushrooms, bell pepper, and Sweet Dandelion Greek Seasoning to skillet. Cook for 2 minutes, until onions and bell peppers are tender, stirring frequently.

Next, add the spinach and meat.

Stir the egg mixture and then pour over the vegetables.

As the egg mixture starts to set, lift edges with spatula to allow uncooked portions to run underneath.

Continue until the mixture is almost set (top will be moist).

Sprinkle with Feta cheese

Broil in the oven until lightly brown and set (1-2 minutes)

Garnish with fresh tomatoes, cottage cheese or fruit. Enjoy
