Have you ever found yourself wanting a meatless burger? I mean, I love a beefy burger but, there are times I just want a veggie burger. The flavors and texture of a veggie burger are just something I crave every so often. You know what I mean right? Anyhow...
Black bean burgers are fun and easy to make. This Black Bean Burger Recipe is one that I use most often. The trick is to make sure beans are thoroughly dried.
Please note that this recipe uses dried black beans, I personally enjoy the process of cooking the beans but if you are short on time, use canned beans and drain well.
Ingredients:
1 16 oz package dried black beans (you can substitute 2 cans of black beans drained well)
1 medium sweet onion finely chopped
1 Tablespoon extra virgin olive oil
1 egg
½ sweet bell pepper or 2 minis- finely chopped (optional)
¾ cup panko bread crumbs
3-4 Tablespoons Sweet Dandelion Steak Seasoning (I also enjoy Sweet Dandelion Fajita Seasoning)
Directions:
Rinse the dried beans and pick out any stones. Place the beans in a large bowl or saucepan and cover with water. Leave overnight.
Drain and rinse the beans before cooking.
Bring to a boil, then reduce the heat, simmer, covered, for roughly two hours. Stir them from time to time to prevent them from sticking to the pot.
Strain the beans until dry.
Place the beans in a bowl and use a fork (or potato masher) to mash them. Keep mashing until they're mostly broken up, but still have some whole beans visible. Add the breadcrumbs, onion, egg, Sweet Dandelion Steak Seasoning, and peppers.
Stir until everything is combined- the mixture will be dry.
Let the mixture sit for 5 minutes.
While the mixture is resting, get freezer safe packaging and freezer paper ready.
This recipe makes roughly 16 burgers-depending size
Form the bean mixture into patties- black bean burgers do not shrink when cooked
To prepare for the freezer:
Place the burgers in the freezer safe packaging of you choice, if you are layering the burgers, place freezer paper between the layers.
Place in freezer until ready to cook.
To cook
Heat a 1-2 tablespoons of olive oil in a skillet over medium-low heat.
Place the patties in the skillet and cook the burgers for about 5 minutes on the first side. Flip them to the other side and continue cooking them for another 5 minutes, or until the burgers are heated through.
Place burgers on a toasted bun, in a wrap, on top of a salad.
Dress up the burger anyway you like, I prefer making Sweet Dandelion Ranch Dressing and Dip Mix or the Delightful Dill Dip and spreading a nice layer on a wrap with spinach.
